Pai Mu Tan or white tea comes from a tea plant called Chaicha or Narcissus which grows in the province of Fujian and is also known as "White Peony". Is one well known and most popular white teas made from very small buds and a few baby leaves picked in the early spring, once they have been dried they look like lots of tiny white blossoms with a few darker leaves surrounding the white bud. The tea produces an amber coloured liquor with a shimmering quality and an elegant spicy taste.
