Sencha tea is produced in Zhejiang Province in China, considered to be the home of green tea. It has a delicate and sweet aroma and a fresh flavour, with a mild astringency that adds a lively note. The tea is gently 'fixed' by using a dry heat such as pan firing the leaves to preserve their original green colour and then dried to prevent too much oxidation from occurring which would turn the green leaves brown and alter their fresh-picked flavor.
